Punta Wagyu Ranch

What did you take out of the freezer?

Fullblood Wagyu cooks differently from supermarket beef. Start with the package in your hand.

The key is the medium heat without adding any cooking oil. Slow rendering for 5 minutes.

Sam, on the spaghetti sauce

Supermarket beef versus this beef

Supermarket beefFullblood WagyuSo you
FatFirm, and it needs a hotter pan.Softer fat that melts near body temperature.Cook on medium. Take it out of the fridge 20 to 30 minutes first.
PanAdd oil or butter. It renders its own fat.Skip the oil. Use that fat to cook the onion.
DrainingDrain the grease. That fat is the flavor.Leave it in the pan.
DonenessWell-done is common. The fat cooks out and turns greasy.Pull it at the USDA temperature and let it rest.
PortionA big steak, 8 to 12 ounces.Rich. A 3 to 4 ounce piece fills you.Slice it and share. One steak feeds two or three.
SeasoningRubs, marinades, and heavy sauce.Mild, sweet beef flavor.Salt just before cooking. Put sauce on the side.

The soft-fat point comes from a Japanese beef association describing its own cattle. Our cattle are raised in Florida.
