Ground beef tacos

The rendered fat seasons the tortilla. Draining it makes ordinary tacos.

Unlike supermarket beef

  • Unlike supermarket beef, leave the fat in the skillet.

Before you start

  • A 1 lb pack needs overnight in the fridge. Never thaw it on the counter.
  • Take it out 20 to 30 minutes before you cook.

Tools: Skillet, Instant-read thermometer.

What you need

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 clove garlic
  • 1 teaspoon chili powder
  • Salt
  • 8 small tortillas
  • Salsa

Steps

    Brown the beef with onion, garlic, salt, and chili powder in a dry skillet.

    Cook about 8 minutes, until the beef reaches 160°F. Do not drain it.

    Do not drain this. It is the flavor.

    Warm the tortillas in a dry pan, about 30 seconds a side.

    Fill the tortillas and top with salsa.
